Rubio’s Fresh Mexican Grill – Non Traditional Redo

Mood for Food was challenged with revamping underperforming . “Non Traditional” sites one of which was at San Diego Padre’s . . Petco Stadium.

Mood for Food’s high touch immersion approach determined key factors in representing a restaurant brand in non-traditional sites, isolated operational roadblocks, implemented process improvements and identified key needs by the consumer in a non traditional scenario. The menu offering was re-vamped to appeal to the consumer. Functional packaging was developed that kept food intact and warm. The labor model was revised and implemented. The front and back of house was cost effectively converted with out the need to pull permits. The winning result, Rubio’s Fresh Mexican Grill was voted the best stadium food in America by Sports Illustrated for 2007.
