Johnny Rockets American Burger Chain contracted Mood for Food to complete an analytical research study and report on Trans Fat Free conversion of Fryers oils in house.

They wanted a seamless turnkey answer to changing over their oil to trans fat free without any changes in taste, profile, texture and shrinkage to four fried menu items all with uniquely inherent differences, Plus a comparison by yield and price. Mood for Food compared 19 challengers to the 2 house incumbent fryer oils.

Results were astonishing in performance of different oils with different foods overall recommended an oil that worked well for all four products but was also the best with the fries which was 40 percent of the work load for the fryer. Their customers never noticed the switch and the shelf life of the oil was extended by an extra week making up for the difference in price of the old incumbent oil.
